You do not need to desolder the EEPROM from the board for the Holden VE headunit.
Have a look at this doco
doc-holden-commodore-ve-eeprom-programming-for-beginners-d69m19.htmlAt the bottom of the document, it shows how to use a 3M clip to physically connect to the EEPROM on the board.
I highly recommend that you use a 3M clip, otherwise you will need to desolder the EEPROM, and you will also need a SOP socket adaptor to plug the EEPROM in.
As for your EEPROM programmer, because EVERY EEPROM programmer is different, and because there are literally thousands upon thousands of EEPROM programmers out there,
and each one may or may not use different software, its going to be very difficult to try and help with your specific EEPROM model.
Have a good read of the above document.
Once you have had a good read (and I mean dont skim through and look at the pictures, take your time, and try to understand what is described in the document), have a look at this document.

(Keep in mind if you are playing around with another make / model, then things will be completely different)...
If you can post up exactly where you are stuck then that will help a lot as well.
Questions that you will need to answer would be
1) Does your EEPROM software work with your EEPROM programmer ?
2) How are you connecting to the EEPROM now ?
3) Can you read any data from the EEPROM ?
4) Is the EEPROM programmer software giving you any errors ?
5) Post up a screen shot of the software, or any photos of what you have now if you can.
The more information you can post up, the more we can try and help you.
Also keep in mind that messing around with EEPROMs can be very very difficult the first time you start playing around.
Also, if you do not have some electronics or micro controller or low level programming background, this is probably going to be a steep learning curve.
But that doesnt mean that it will be impossible, or not rewarding if you are willing to persist.
